So here's a recipe to start! Made two loaves and 24 muffins today out of a double batch. They. Are. AWESOME! Enjoy!
Ingredients:
3 Cups Whole Wheat Flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp Sea Salt4 eggs (or 2 eggs and 3 egg whites if you prefer)
2 Cups Evaporated Cane Juice (i.e. "Clean" Sugar)
1 Cup Canola Oil
1/2 Tbsp. Vanilla
3 Ripe Bananas, mashed (about 1 1/2 cups)
2 Cups Zucchini, unpeeled and shredded
Directions:
* In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and sea salt. Set aside.
* Beat eggs/whites. Blend in Evaporated Cane Juice, oil, and vanilla. Add bananas and mix well. Stir into flour mixture until well-mixed. Gently fold in zucchini.
* Pour into two greased loaf pans. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Cool for 10 minutes. Remove from pans to wire racks and cool completely. Yields: 2 loaves. (For muffins, pour into 24 greased muffin cups and bake approximately 25 minutes, or until toothpick comes out clean.)
Yummy! I found this while searching for a recipe to use up some old bananas. I also had a large zucchini so lucky me! I had everything to make this delicious bread. I baked it in 4 mini loaf pans for about 40 minutes. The cinnamon is not included in the directions, mix it in the dry ingredients.

DeleteJust made this for the first time. My kids love them! I made muffins and mini muffins. My 1 year old kept stealing the mini ones and threw an absolute fit when I moved them someplace he couldn't get to them anymore.
